  • 30g dried wood ear mushrooms
  • 1 tablespoon soy sauce (light or dark)
  • 1 teaspoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 clove garlic (chopped)
  • 1 small hot pepper or chili flakes (optional, if you want a hardcore mode)
  • 1 teaspoon toasted sesame seeds
  • 2 scallions (sliced)
  • 1 pinch sugar
  • Salt, freshly ground black pepper
